Ingredients:
- 1 cup flour
- 2 tbsp chia seeds
- 1/4 cup corn starch
- 1 cup quick oats
- 1 tsp vanilla extract
- 2 tbsp nutritional yeast
- 1/2 cup vanilla yogurt
Instructions:
1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, combine the flour, chia seeds, corn starch, quick oats, and nutritional yeast.
3. Add the vanilla extract and vanilla yogurt to the dry ingredients and mix until well combined.
4. Scoop out tablespoon-sized portions of the cookie dough and place them on the prepared baking sheet, spacing them apart.
5. Flatten each cookie slightly with the back of a spoon.
6. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
7. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
