Ingredients:
- 1 lb chicken breast, sliced
- 2 eggs
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions:
1. In a bowl, beat the eggs and season with salt and pepper. Heat 1 tbsp of vegetable oil in a pan over medium heat. Pour the beaten eggs into the pan and scramble until cooked through. Remove the scrambled eggs from the pan and set aside.
2. In the same pan, heat the remaining 1 tbsp of vegetable oil. Add the sliced chicken and cook until browned and cooked through.
3. Add the sliced bell pepper, onion, and minced garlic to the pan with the chicken. Stir-fry for a few minutes until the vegetables are tender.
4. Return the scrambled eggs to the pan with the chicken and vegetables.
5. In a small bowl, mix together the soy sauce, oyster sauce, and sesame oil. Pour the sauce over the chicken, eggs, and vegetables in the pan. Stir well to combine and coat everything with the sauce.
6. Cook for another minute or two, allowing the flavors to meld together.
7. Serve the chicken and egg stir-fry hot over steamed rice.
