Ingredients:
- 1 cup of rice
- 1 lb of chicken breast, diced
- 2 tablespoons of vegetable oil
- 1 bell pepper, sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1/4 cup of soy sauce
- 1 tablespoon of sesame oil
- Salt and pepper to taste
- Optional: green onions for garnish

Step by Step Guide:
1. Cook the rice according to package instructions and set aside.
2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
3. Add the diced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes.
4. Push the chicken to one side of the skillet and add the bell pepper, onion, and garlic to the other side. Cook for another 2-3 minutes until the vegetables are tender.
5. Combine the chicken and vegetables in the skillet and add the cooked rice.
6. Pour the soy sauce and sesame oil over the mixture and stir well to combine.
7. Season with salt and pepper to taste.
8. Cook for an additional 2-3 minutes, stirring occasionally, until everything is heated through.
