Ingredients:
- 1 onion, diced
- 1 bell pepper, sliced
- 3 cloves of garlic, minced
- 1 tsp salt
- 2 tomatoes, diced
- 1 cup rice
- 1 lb chicken breast, diced
- 2 potatoes, peeled and diced

Instructions:
1. In a large skillet, heat some oil over medium heat.
2. Add the diced onion, sliced bell pepper, minced garlic, and salt. Cook until the vegetables are softened.
3. Add the diced tomatoes and cook for another 2-3 minutes.
4. Push the vegetables to the side of the skillet and add the diced chicken. Cook until the chicken is browned on all sides.
5. Add the diced potatoes and rice to the skillet. Stir everything together.
6. Pour in enough water to cover the ingredients in the skillet. Bring to a boil.
7. Reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes or until the rice is cooked and the chicken is tender.
8. Once everything is cooked through, remove from heat and let it sit for a few minutes before serving.
9. Serve the chicken and vegetable rice bowl hot and enjoy!
