Ingredients:
- 1 lb chicken breast, sliced
- 1 small cabbage, shredded
- 2 potatoes, diced
- 2 eggs, beaten
- 1 tomato, diced
- 1 cup cooked rice
- Salt, to taste
- 2 cloves garlic, minced
- Pepper, to taste
- 1 onion, sliced
Instructions:
1. Heat some oil in a large skillet or wok over medium-high heat.
2. Add the sliced chicken breast and cook until browned and cooked through. Remove from the skillet and set aside.
3. In the same skillet, add the diced potatoes and cook until they start to soften.
4. Add the minced garlic, sliced onion, and shredded cabbage. Cook until the vegetables are tender.
5. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked.
6. Add the cooked chicken back to the skillet, along with the diced tomato.
7. Stir in the cooked rice and season with salt and pepper to taste.
8. Cook everything together for a few more minutes until heated through.
