Ingredients:
- 2 cups cooked rice
- 1 chicken breast, diced
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1/2 cup diced vegetables (carrots, peas, bell peppers)
- Salt and pepper to taste
- Optional: green onions for garnish
Instructions:
1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
2. Add the diced chicken breast to the skillet and cook until browned and cooked through.
3. Push the chicken to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until cooked.
4. Add the diced vegetables to the skillet and cook until slightly softened.
5. Add the cooked rice to the skillet and stir everything together.
6. Pour the soy sauce over the rice and mix well to combine.
7. Season with salt and pepper to taste.
8. Cook for an additional 2-3 minutes, stirring frequently.
9. Remove from heat and garnish with chopped green onions, if desired.
