Ingredients:
- 2 cups cooked rice
- 1 chicken breast, diced
- 2 eggs, beaten
- 1/2 cup mixed vegetables (carrots, peas, corn)
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Vegetable oil for cooking
Step by Step Guide:
1. Heat a large skillet or wok over medium-high heat. Add a little vegetable oil.
2. Add the diced chicken breast to the skillet and cook until browned and cooked through.
3. Push the chicken to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked, then mix them with the chicken.
4. Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
5. Add the mixed vegetables to the skillet and cook until they are heated through.
6. Add the cooked rice to the skillet and stir everything together.
7. Pour the soy sauce and sesame oil over the rice and mix well to combine all the flavors.
8. Season with salt and pepper to taste.
9. Continue to cook for another 2-3 minutes, stirring frequently, until everything is heated through.
