Ingredients:
- 2 cups cooked rice
- 1 chicken breast, diced
- 2 eggs, beaten
- 1 onion, chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- Salt to taste
- Soy sauce (optional)
- Vegetable oil
Instructions:
1. Heat a large skillet or wok over medium-high heat and add some vegetable oil.
2. Add the diced chicken breast and cook until browned and cooked through. Remove from the skillet and set aside.
3. In the same skillet, add a little more oil if needed and sauté the chopped onion, bell pepper, and minced garlic until softened.
4. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
5. Add the cooked rice to the skillet and stir to combine with the vegetables and eggs.
6. Add the diced tomato and cooked chicken back to the skillet. Mix well.
7. Season with salt and soy sauce (if using), adjusting to taste.
8. Continue to cook and stir until everything is heated through.
9. Serve hot and enjoy your delicious chicken fried rice!
