Ingredients:
- 2 cups cooked rice
- 2 chicken breasts, diced
- 3 eggs
- 1/2 cup diced carrots
- 1/2 cup peas
- 3 tablespoons soy sauce
- 2 tablespoons oil
- Salt and pepper to taste
- Optional: green onions for garnish

Instructions:
1. Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.
2. Add the diced chicken breasts and cook until they are no longer pink, about 5-7 minutes.
3. Push the chicken to one side of the pan and crack the eggs into the other side. Scramble the eggs until cooked through.
4. Add the diced carrots and peas to the pan and cook for another 2-3 minutes.
5. Add the cooked rice to the pan and stir everything together.
6. Pour the soy sauce over the rice and mix well to combine all the ingredients.
7. Season with salt and pepper to taste.
8. Cook for another 2-3 minutes, stirring occasionally, until everything is heated through.
9. Serve the chicken fried rice hot, garnished with chopped green onions if desired.
