Ingredients:
- 1 lb chicken breast, diced
- 2 cups cooked rice
- 2 eggs, beaten
- 1 onion, diced
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- Salt and pepper to taste

Instructions:
1. Heat vegetable oil in a large skillet over medium-high heat.
2. Add diced chicken to the skillet and cook until browned and cooked through.
3. Push the chicken to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked.
4. Add diced onion to the skillet and sauté until translucent.
5. Stir in the cooked rice and soy sauce. Mix well to combine all ingredients.
6. Season with salt and pepper to taste.
7. Cook for an additional 2-3 minutes, stirring frequently.
8. Remove from heat and serve hot.
