Ingredients:
- 2 chicken breasts, diced
- 2 eggs, beaten
- 2 cups cooked rice
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 2 cloves garlic, minced
- Salt and pepper to taste
- Green onions for garnish

Instructions:
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add diced chicken and cook until browned and cooked through.
3. Push the chicken to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until cooked.
4. Add diced carrots, peas, and minced garlic to the pan. Cook for a few minutes until vegetables are tender.
5. Add cooked rice to the pan and stir everything together.
6. Pour soy sauce over the rice and mix well to combine all the ingredients.
7. Season with salt and pepper to taste.
8. Garnish with chopped green onions before serving.
