Ingredients:
- 2 chicken breasts, diced
- 2 cups cooked rice
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 2 cloves garlic, minced
- Salt and pepper to taste
- Green onions for garnish

Step by Step Guide:
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add diced chicken breasts and cook until browned and cooked through.
3. Push the chicken to one side of the pan and add beaten eggs to the other side. Scramble the eggs until cooked.
4. Add diced carrots, frozen peas, and minced garlic to the pan. Cook for a few minutes until vegetables are tender.
5. Add cooked rice to the pan and stir to combine with the chicken, eggs, and vegetables.
6. Pour soy sauce over the mixture and stir well to evenly coat everything.
7. Season with salt and pepper to taste.
8. Cook for another 2-3 minutes, stirring frequently.
9. Remove from heat and garnish with chopped green onions.
