Ingredients:
- 2 cups cooked rice
- 1 chicken breast, diced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 1/2 cup frozen mixed vegetables
- 2 eggs, beaten
- 2 cloves garlic, minced
- 1 small onion, diced
- Salt and pepper to taste
- Vegetable oil for cooking
Instructions:
1. In a large skillet or wok, heat some vegetable oil over medium-high heat.
2. Add the diced chicken breast and cook until browned and cooked through.
3. Push the chicken to one side of the skillet and add a little more oil if needed.
4. Add the minced garlic and diced onion to the skillet and sauté until fragrant.
5. Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side.
6. Scramble the eggs until cooked, then mix them with the chicken, vegetables, and onion.
7. Add the cooked rice to the skillet and stir to combine with the other ingredients.
8. Pour the soy sauce, oyster sauce, and sesame oil over the rice mixture and stir well to evenly coat everything.
9. Season with salt and pepper to taste.
10. Continue cooking and stirring for a few more minutes until everything is heated through.
