Ingredients:
- 2 cups cooked rice
- 1 chicken breast, diced
- 3 cloves of garlic, minced
- 1/2 teaspoon salt
- 1 tomato, diced
- 1 onion, chopped
- 2 eggs
- 2 tablespoons vegetable oil
Step by Step Guide:
1. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
2. Add the diced chicken breast and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
3. In the same skillet, add the remaining tablespoon of vegetable oil.
4. Add the minced garlic and chopped onion, and sauté until fragrant and translucent.
5. Push the garlic and onion to one side of the skillet and crack the eggs into the empty space.
6. Scramble the eggs until cooked, then mix them in with the garlic and onion.
7. Add the diced tomato to the skillet and cook for a few minutes until softened.
8. Add the cooked rice and salt to the skillet, stirring to combine all the ingredients.
9. Finally, add the cooked chicken back to the skillet and stir everything together until heated through.
