Ingredients:
- 2 cups of cooked rice
- 1 chicken breast, diced
- 1 onion, chopped
- 2 tablespoons of soy sauce
- 2 eggs
- 1 tablespoon of vegetable oil
- Salt and pepper to taste
- Optional: vegetables like peas, carrots, and bell peppers

Step by Step Guide:
1. In a large pan or wok, heat the vegetable oil over medium-high heat.
2. Add the diced chicken breast and cook until it is no longer pink, about 5-7 minutes.
3. Push the chicken to one side of the pan and crack the eggs into the other side. Scramble the eggs until cooked through.
4. Add the chopped onion to the pan and sauté until it becomes translucent.
5. If using additional vegetables, add them to the pan at this point and cook until they are tender.
6. Add the cooked rice to the pan and stir everything together.
7. Pour the soy sauce over the rice and mix well to ensure it is evenly distributed.
8. Season with salt and pepper to taste.
9. Continue to cook for another 2-3 minutes, stirring frequently, until everything is heated through.
