Ingredients:
- 2 cups cooked rice
- 1 chicken breast, diced
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1/2 cup mixed vegetables (carrots, peas, corn)
- Salt and pepper to taste
- Optional: green onions for garnish

Instructions:
1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
2. Add the diced chicken breast to the skillet and cook until browned and cooked through.
3. Push the chicken to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked.
4. Add the mixed vegetables to the skillet and stir-fry for a few minutes until they are heated through.
5. Add the cooked rice to the skillet and stir to combine with the chicken, eggs, and vegetables.
6. Pour the soy sauce over the rice mixture and stir well to evenly distribute the sauce.
7. Season with salt and pepper to taste.
8. Continue to cook, stirring occasionally, until everything is heated through.
9. Serve the chicken fried rice hot, garnished with chopped green onions if desired.
