Ingredients:
- 2 chicken breasts, diced
- 2 cups cooked rice
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1/2 cup diced vegetables (carrots, peas, bell peppers)
- Salt and pepper to taste
- Optional: green onions for garnish

Instructions:
1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
2. Add the diced chicken breasts to the skillet and cook until browned and cooked through.
3. Push the chicken to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked.
4. Add the cooked rice to the skillet and stir to combine with the chicken and eggs.
5. Pour the soy sauce over the chicken and rice mixture, and stir well to evenly distribute the sauce.
6. Add the diced vegetables to the skillet and stir-fry for a few minutes until the vegetables are tender.
7. Season with salt and pepper to taste.
8. Serve the chicken fried rice hot, garnished with chopped green onions if desired.
