Ingredients:
- 2 chicken breasts, diced
- 2 cups cooked rice
- 3 eggs
- Soy sauce
- Vegetable oil
- Salt and pepper
- Mixed vegetables (optional)

Instructions:
1. Heat a large skillet or wok over medium-high heat and add a little vegetable oil.
2. Beat the eggs in a bowl and pour them into the skillet. Scramble the eggs until cooked through, then remove them from the skillet and set aside.
3. In the same skillet, add a bit more oil and cook the diced chicken until it is no longer pink in the center.
4. Add the cooked rice to the skillet with the chicken and stir to combine.
5. Pour in a generous amount of soy sauce and season with salt and pepper to taste. Stir well to ensure the rice is evenly coated.
6. If desired, add in some mixed vegetables at this point and cook until they are heated through.
7. Finally, add the scrambled eggs back into the skillet and mix everything together.
8. Serve hot and enjoy your delicious Chicken Fried Rice!
