Ingredients:
- 80g cocoa powder
- 160ml plant-based milk
- 160g almond powder
- 200g all-purpose flour
- 200g sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 120ml vegetable oil
- 2 tsp vanilla extract
- 2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water, mixed and set aside for 5 minutes)
Instructions:
1. Preheat the oven to 180°C (350°F) and grease a cake pan.
2. In a large mixing bowl, combine the cocoa powder, almond powder, all-purpose flour, sugar, baking powder, baking soda, and salt.
3. In a separate bowl, whisk together the plant-based milk, vegetable oil, vanilla extract, and flax eggs.
4. Pour the wet ingredients into the dry ingredients and mix until well combined.
5. Pour the batter into the prepared cake pan and smooth the top.
6. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
8. Serve the chocolate almond pudding cake on its own or with a dollop of plant-based whipped cream.
