Ingredients:
- 1 cup coconut flour
- 1 cup cottage cheese
- 1 cup chocolate chips
- 4 eggs
- 1/2 cup sugar-free sweetener
Instructions:
1. Preheat the oven to 350°F (180°C) and grease a 9-inch springform pan.
2. In a mixing bowl, combine the coconut flour and sugar-free sweetener.
3. Add the eggs to the bowl and mix well until a dough forms.
4. Press the dough into the bottom of the greased pan to form the crust.
5. In a separate bowl, melt the chocolate chips in the microwave or using a double boiler.
6. In a blender, blend the cottage cheese until smooth.
7. Add the melted chocolate to the blender and blend until well combined.
8. Pour the chocolate and cottage cheese mixture over the coconut flour crust in the pan.
9. Smooth out the top with a spatula.
10. Bake in the preheated oven for 25-30 minutes, or until the cheesecake is set.
11. Allow the cheesecake to cool before refrigerating for at least 2 hours.
12. Once chilled, slice and serve the delicious Chocolate Coconut Cheesecake.
