Recipe Name: Citrus Chicken and Rice Bowl

Ingredients:
- 1 cup rice
- 1 lb chicken breast, diced
- 2 potatoes, diced
- 1 lemon
- 1 onion, diced
- 1 tomato, diced
- 2 tomatillos, diced
- 1 can black beans, drained and rinsed
- 1/4 cup mojo criollo marinade
- 1 head romaine lettuce, chopped
- 1 bell pepper, sliced
- Salt and pepper to taste
- 3 cloves garlic, minced
- 1 zucchini, sliced

Step by Step Guide:
1. Cook the rice according to package instructions and set aside.
2. In a large skillet, heat some oil over medium heat. Add the diced chicken and cook until browned and cooked through.
3. Squeeze the juice of the lemon over the cooked chicken and stir to combine.
4. Remove the chicken from the skillet and set aside.
5. In the same skillet, add a bit more oil and sauté the diced potatoes until golden brown and cooked through. Season with salt and pepper.
6. Add the diced onion, tomato, tomatillo, and minced garlic to the skillet. Cook until the vegetables are softened.
7. Stir in the black beans and mojo criollo marinade. Cook for another few minutes until everything is heated through.
8. In a separate pan, sauté the sliced zucchini until tender.
9. To assemble the bowls, divide the cooked rice among serving bowls. Top with the chicken, potato and vegetable mixture, sautéed zucchini, chopped romaine lettuce, and sliced bell pepper.
