Ingredients:
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 large onion, thinly sliced
- 1/2 cup plain yogurt
- 2 tomatoes, chopped
- 2 tablespoons biryani masala
- 1 tablespoon ginger-garlic paste
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 4 cups water
- 1/4 cup ghee
- Salt to taste
Step by Step Guide:
1. Wash the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
2. In a large pot, heat the ghee over medium heat. Add the sliced onions and cook until golden brown.
3. Add the chicken pieces to the pot and cook until they are browned on all sides.
4. Stir in the biryani masala and ginger-garlic paste, and cook for another 2-3 minutes.
5. Add the chopped tomatoes, yogurt, coriander leaves, mint leaves, and salt. Cook for another 5 minutes.
6. Add the soaked rice to the pot and gently mix everything together.
7. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes or until the rice is cooked and the chicken is tender.
8. Once done, fluff the biryani with a fork and serve hot with raita or salad on the side.
