- 4 eggs
- 1 lb pasta
- 1 cup grated Parmesan cheese
- 1/2 lb pancetta or bacon, diced
- 4 cloves garlic, minced
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)

1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.
2. In a separate bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper. Set aside.
3. In a large skillet, cook the diced pancetta or bacon over medium heat until crispy. Add the minced garlic and cook for another minute.
4. Add the drained pasta to the skillet with the pancetta and garlic, tossing to combine.
5. Remove the skillet from heat and quickly pour the egg and cheese mixture over the hot pasta, stirring continuously to coat the pasta evenly. The heat from the pasta will cook the eggs and create a creamy sauce. If the sauce is too thick, gradually add some of the reserved pasta water to loosen it up.
6. Serve the creamy carbonara pasta immediately, garnished with chopped parsley and extra grated Parmesan cheese if desired.
