Ingredients:
- 4 eggs
- 300g pasta
- 100g grated Parmesan cheese
- 100g pancetta or bacon, diced
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. In a large pot, bring water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
2. In a separate bowl, whisk together the eggs, grated Parmesan cheese, salt, and pepper. Set aside.
3. In a large skillet, cook the diced pancetta or bacon over medium heat until crispy. Add the minced garlic and cook for another minute.
4. Add the cooked pasta to the skillet with the pancetta and garlic. Toss to combine.
5. Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta. Toss the pasta continuously to coat it evenly with the creamy sauce. If the sauce is too thick, add some of the reserved pasta water to loosen it up.
6. Serve the creamy carbonara pasta hot, garnished with chopped parsley and extra Parmesan cheese if desired.
