Ingredients:
- 2 eggs
- 200g pasta
- 1 onion
- 50g grated Parmesan cheese
- 100g pancetta or bacon
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
2. In a separate bowl, whisk together the eggs, grated Parmesan cheese, salt, and pepper. Set aside.
3. In a large skillet, cook the pancetta or bacon over medium heat until crispy. Remove from the skillet and set aside.
4. In the same skillet, sauté the chopped onion until translucent.
5. Add the cooked pasta to the skillet with the onions and toss to combine.
6. Remove the skillet from heat and quickly pour in the egg and cheese mixture, stirring constantly to coat the pasta. The heat from the pasta will cook the eggs and create a creamy sauce.
7. If the sauce is too thick, gradually add some of the reserved pasta water until desired consistency is reached.
8. Crumble the cooked pancetta or bacon over the pasta and toss to combine.
9. Serve the creamy carbonara pasta hot, garnished with fresh parsley and additional grated Parmesan cheese if desired.
