Ingredients:
- 1 lb chicken breast, diced
- 2 eggs
- 1 tsp salt
- 8 oz pasta
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Freshly ground black pepper
- Chopped parsley for garnish
Instructions:
1. In a large pot, bring water to a boil and cook the pasta according to package instructions. Drain and set aside.
2. In a bowl, whisk together the eggs, heavy cream, Parmesan cheese, salt, and a pinch of black pepper. Set aside.
3. In a large skillet, heat olive oil over medium heat. Add the diced chicken and minced garlic. Cook until the chicken is no longer pink and cooked through.
4. Reduce the heat to low and add the cooked pasta to the skillet with the chicken.
5. Pour the egg and cream mixture over the pasta and chicken. Stir continuously over low heat until the sauce thickens and coats the pasta.
6. Remove from heat and garnish with chopped parsley.
