Ingredients:
- 1 Hokkaido pumpkin, peeled and diced
- 1 can of coconut milk
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- Salt and pepper to taste
- Olive oil

Instructions:
1. In a large pot, heat some olive oil over medium heat.
2. Add the chopped onion and minced garlic, sauté until fragrant.
3. Add the diced Hokkaido pumpkin to the pot and cook for about 5 minutes, stirring occasionally.
4. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes or until the pumpkin is tender.
5. Using an immersion blender, blend the soup until smooth.
6. Stir in the coconut milk and season with salt and pepper to taste.
7. Let the soup simmer for another 5 minutes.
8. Serve hot and enjoy!
