Ingredients:
- 8 oz penne pasta
- 4 oz cream cheese
- 1/2 cup Philadelphia cream cheese
- 2 cups fresh spinach
- 1/2 cup grated pecorino cheese
- 2 chicken breasts, cooked and diced
- Salt to taste
- 2 tbsp olive oil
- 2 tbsp butter
Instructions:
1. Cook the penne pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add the diced chicken breasts and cook until no longer pink in the center. Remove from the skillet and set aside.
3. In the same skillet, melt butter over medium heat. Add the fresh spinach and sauté until wilted.
4. Add the cream cheese and Philadelphia cream cheese to the skillet, stirring until melted and well combined.
5. Stir in the cooked chicken and penne pasta, mixing until everything is coated in the creamy sauce.
6. Sprinkle grated pecorino cheese over the top and stir to combine.
