Ingredients:
- 2 cups cooked rice
- 2 eggs
- 2 tablespoons vegetable oil
- 1/2 cup mixed vegetables (carrots, peas, corn)
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Green onions for garnish
Instructions:
1. Heat 1 tablespoon of vegetable oil in a large pan over medium heat.
2. Crack the eggs into the pan and scramble them until cooked through. Remove the eggs from the pan and set aside.
3. In the same pan, add the remaining tablespoon of vegetable oil.
4. Add the mixed vegetables to the pan and sauté until they are tender.
5. Add the cooked rice to the pan and stir to combine with the vegetables.
6. Push the rice and vegetables to one side of the pan and pour the beaten eggs into the empty side.
7. Scramble the eggs until they are cooked, then mix them into the rice and vegetables.
8. Add soy sauce, salt, and pepper to the pan and stir well to combine all the ingredients.
9. Cook for another 2-3 minutes, stirring occasionally.
10. Garnish with chopped green onions before serving.
