Ingredients:
- 2 cups cooked rice
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1/2 cup diced vegetables (such as carrots, peas, bell peppers)
- Salt and pepper to taste
- Optional: green onions for garnish
Instructions:
1. In a small bowl, beat the eggs with a pinch of salt and pepper.
2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
3. Add the beaten eggs to the skillet and scramble them until cooked through. Remove the eggs from the skillet and set aside.
4. In the same skillet, add the diced vegetables and sauté until they are tender.
5. Add the cooked rice to the skillet and stir to combine with the vegetables.
6. Pour the soy sauce over the rice and vegetables, and mix well.
7. Push the rice to one side of the skillet and pour the beaten eggs into the empty space.
8. Stir the eggs continuously until they are fully cooked and then mix them into the rice.
9. Season the egg fried rice with salt and pepper to taste.
10. Garnish with chopped green onions if desired.
11. Serve hot and enjoy!
