Ingredients:
- 2 eggs
- 1 cup chopped cabbage
- 1/2 cup shredded carrots
- 2 cups cooked rice
- 2 tablespoons soy sauce
- 1 tablespoon oil
- Salt and pepper to taste
Instructions:
1. Heat oil in a large skillet or wok over medium-high heat.
2. Crack the eggs into the skillet and scramble them until cooked through. Remove the eggs from the skillet and set aside.
3. In the same skillet, add the chopped cabbage and shredded carrots. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
4. Add the cooked rice to the skillet and stir to combine with the vegetables.
5. Pour the soy sauce over the rice and vegetables. Stir well to ensure everything is coated evenly.
6. Add the scrambled eggs back into the skillet and mix everything together.
7. Season with salt and pepper to taste.
