Ingredients:
- 2 cups of cooked rice
- 3 eggs
- 2 tablespoons of vegetable oil
- Soy sauce
- Salt and pepper to taste
- Optional: diced vegetables (such as carrots, peas, bell peppers)
Instructions:
1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
2. Crack the eggs into the skillet and scramble them until fully cooked. Remove the eggs from the skillet and set aside.
3. In the same skillet, add the remaining tablespoon of vegetable oil.
4. Add the cooked rice to the skillet and stir-fry for a few minutes until heated through.
5. If using diced vegetables, add them to the skillet and cook until tender.
6. Push the rice and vegetables to one side of the skillet and pour the scrambled eggs back in.
7. Mix everything together in the skillet and season with soy sauce, salt, and pepper to taste.
8. Continue to stir-fry for another minute or two until everything is well combined and heated through.
9. Serve hot and enjoy your delicious Egg Fried Rice!
