Ingredients:
- 1 lb goat meat, diced
- 1 cup rice
- 1 can of beans, drained and rinsed
- 2 tomatoes, diced
- 1 carrot, diced
- 1 bell pepper, diced
- 3 cloves of garlic, minced
- 1 onion, chopped
- Handful of coriander leaves, chopped
- Salt and pepper to taste
- Olive oil for cooking
Step by Step Guide:
1. In a large skillet, heat some olive oil over medium heat. Add the diced goat meat and cook until browned on all sides. Remove the meat from the skillet and set aside.
2. In the same skillet, add a bit more olive oil if needed and sauté the chopped onion and minced garlic until fragrant.
3. Add the diced tomatoes, carrot, and bell pepper to the skillet. Cook until the vegetables start to soften.
4. Stir in the rice and beans, then add back the cooked goat meat. Season with salt and pepper to taste.
5. Pour in enough water to cover the ingredients in the skillet. Bring to a boil, then reduce heat to low, cover, and let simmer until the rice is cooked and the liquid is absorbed.
6. Once the rice is cooked, remove from heat and stir in the chopped coriander leaves.
7. Serve the goat meat and vegetable rice bowl hot, garnished with extra coriander leaves if desired.
