Ingredients:
- 4 chicken thighs
- 1 cup rice
- 4 yellow potatoes, diced
- 1 onion, sliced
- 2 sprigs of rosemary
- 1 teaspoon thyme
- 1 bay leaf
- 1 bell pepper, sliced

Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large baking dish, combine the diced yellow potatoes, sliced onions, and sliced bell pepper.
3. Place the chicken thighs on top of the vegetables in the baking dish.
4. Sprinkle the thyme over the chicken thighs and vegetables.
5. Place the rosemary sprigs and bay leaf in the baking dish for added flavor.
6. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
7. Remove the foil and continue baking for an additional 20-25 minutes, or until the chicken is cooked through and the potatoes are tender.
