Ingredients:
- 2 lbs ripe tomatoes, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon ground cloves
Instructions:
1. In a large saucepan, combine the chopped tomatoes, onion, and garlic.
2. Cook over medium heat until the tomatoes start to break down, stirring occasionally.
3. Add the apple cider vinegar, brown sugar, salt, black pepper, paprika, and ground cloves to the saucepan.
4. Continue to cook the mixture over low heat, stirring occasionally, for about 45 minutes or until it thickens.
5. Remove the saucepan from the heat and let the mixture cool slightly.
6. Use an immersion blender or a regular blender to puree the mixture until smooth.
7. Strain the ketchup through a fine mesh sieve to remove any seeds or large pieces.
8. Transfer the ketchup to a clean jar or container and let it cool completely before storing it in the refrigerator.
