Ingredients:
- 1 whole chicken, about 4-5 lbs
- 1 lemon, sliced
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of fresh rosemary, chopped
- 1 tablespoon of fresh thyme, chopped
- Salt and pepper to taste
Step by Step Guide:
1. Preheat the oven to 400°F (200°C).
2. Rinse the chicken and pat it dry with paper towels.
3. In a small bowl, mix together the minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper.
4. Rub the herb mixture all over the chicken, including under the skin.
5. Place the sliced lemon inside the cavity of the chicken.
6. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
7. Let the chicken rest for 10-15 minutes before carving.
