Ingredients:
- 1 whole chicken, about 4-5 pounds
- 2 lemons
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of fresh rosemary, chopped
- 1 tablespoon of fresh thyme, chopped
- Salt and pepper to taste

Step by Step Guide:
1. Preheat the oven to 400°F (200°C).
2. Rinse the chicken and pat it dry with paper towels.
3. In a small bowl, mix together the minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper.
4. Cut one lemon in half and squeeze the juice over the chicken. Place the lemon halves inside the cavity of the chicken.
5. Rub the garlic herb mixture all over the chicken, making sure to coat it evenly.
6. Slice the other lemon into thin slices and place them on top of the chicken.
7. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (74°C).
8. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
