- 1 whole chicken (about 4-5 lbs)
- 2 lemons
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of fresh rosemary, chopped
- 1 tablespoon of fresh thyme, chopped
- Salt and pepper to taste

Step by Step Guide:
1. Preheat the oven to 400°F (200°C).
2. Rinse the chicken under cold water and pat it dry with paper towels.
3. Zest one of the lemons and set aside the zest.
4. In a small bowl, mix together the lemon zest, minced garlic, olive oil, rosemary, thyme, salt, and pepper.
5. Rub the herb mixture all over the chicken, making sure to get it under the skin as well.
6. Cut the zested lemon in half and place it inside the cavity of the chicken.
7. Cut the other lemon into slices and place them around the chicken in the roasting pan.
8. Roast the chicken in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (74°C).
9. Remove the chicken from the oven and let it rest for 10 minutes before carving.
