Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 1 lemon, sliced
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Rinse the chicken inside and out, then pat dry with paper towels.
3. In a small bowl, mix together the minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper.
4. Rub the garlic herb mixture all over the chicken, including under the skin.
5. Place the sliced lemon inside the cavity of the chicken.
6. Tie the legs together with kitchen twine and tuck the wings under the body of the chicken.
7. Place the chicken in a roasting pan and roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).
8. Let the chicken rest for 10-15 minutes before carving.
