Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 1 lemon, sliced
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of fresh rosemary, chopped
- 1 tablespoon of fresh thyme, chopped
- Salt and pepper to taste

Step by Step Guide:
1. Preheat the oven to 375°F (190°C).
2. Rinse the chicken and pat it dry with paper towels.
3. In a small bowl, mix together the minced garlic, olive oil, rosemary, thyme, salt, and pepper.
4. Rub the garlic herb mixture all over the chicken, including under the skin and inside the cavity.
5. Place the sliced lemon inside the cavity of the chicken.
6. Tie the legs together with kitchen twine and tuck the wings under the body of the chicken.
7. Place the chicken in a roasting pan and roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).
8. Let the chicken rest for 10-15 minutes before carving.
