Ingredients:
- 1 whole chicken, about 4-5 lbs
- 2 lemons
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of fresh rosemary, chopped
- 1 tablespoon of fresh thyme, chopped
- Salt and pepper to taste

Step by Step Guide:
1. Preheat the oven to 400°F (200°C).
2. Rinse the chicken under cold water and pat dry with paper towels.
3. Zest one lemon and then cut it in half. Squeeze the juice from the other lemon.
4. In a small bowl, combine the lemon zest, lemon juice, minced garlic, olive oil, rosemary, thyme, salt, and pepper.
5. Rub the lemon herb mixture all over the chicken, making sure to get it under the skin as well.
6. Place the lemon halves inside the cavity of the chicken.
7. Place the chicken on a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
8. Let the chicken rest for 10 minutes before carving.
