Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 2 lemons
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of fresh rosemary, chopped
- 1 tablespoon of fresh thyme, chopped
- Salt and pepper to taste
Step by Step Guide:
1. Preheat the oven to 425°F (220°C).
2. Rinse the chicken inside and out, then pat dry with paper towels.
3. In a small bowl, combine the minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper.
4. Zest one of the lemons and add the zest to the herb mixture. Cut both lemons in half.
5. Rub the herb mixture all over the chicken, including under the skin and inside the cavity.
6. Place the lemon halves inside the cavity of the chicken.
7. Tie the legs together with kitchen twine and tuck the wings under the body.
8. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (74°C).
9. Let the chicken rest for 10-15 minutes before carving.
