Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 2 lemons
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of fresh rosemary, chopped
- 1 tablespoon of fresh thyme, chopped
- Salt and pepper to taste

Step by Step Guide:
1. Preheat the oven to 400°F (200°C).
2. Rinse the chicken inside and out, then pat dry with paper towels.
3. In a small bowl, combine the minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper.
4. Cut one lemon in half and squeeze the juice into the herb mixture. Slice the other lemon into rounds.
5. Rub the herb mixture all over the chicken, including under the skin and inside the cavity.
6. Place the lemon rounds inside the cavity of the chicken.
7. Tie the legs together with kitchen twine and tuck the wings under the body.
8. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
9. Let the chicken rest for 10-15 minutes before carving.
10. Serve the lemon herb roasted chicken with your favorite sides and enjoy!
