Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 1 lemon, sliced
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Step by Step Guide:
1. Preheat the oven to 400°F (200°C).
2. Rinse the chicken and pat it dry with paper towels.
3. In a small bowl, mix together the minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper.
4. Rub the garlic herb mixture all over the chicken, including under the skin and inside the cavity.
5. Place the lemon slices inside the cavity of the chicken.
6. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
7. Remove the chicken from the oven and let it rest for 10 minutes before carving.
