Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 2 lemons
- 4 cloves of garlic, minced
- 2 tablespoons of fresh rosemary, chopped
- 2 tablespoons of fresh thyme, chopped
- Salt and pepper to taste
- 2 tablespoons of olive oil

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Rinse the chicken inside and out, then pat dry with paper towels.
3. In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, salt, pepper, and olive oil to make a marinade.
4. Rub the marinade all over the chicken, making sure to get it under the skin as well.
5. Cut one lemon in half and squeeze the juice over the chicken. Place the squeezed lemon halves inside the cavity of the chicken.
6. Cut the other lemon into slices and arrange them around the chicken in the roasting pan.
7. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
8. Let the chicken rest for 10-15 minutes before carving and serving.
