Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 2 lemons
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Rinse the chicken inside and out, then pat dry with paper towels.
3. In a small bowl, mix together the minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper.
4. Cut one lemon in half and squeeze the juice over the chicken, then place the lemon halves inside the cavity of the chicken.
5. Carefully loosen the skin of the chicken and rub the herb mixture under the skin, covering the breast and thighs.
6. Cut the other lemon into slices and place them on top of the chicken.
7. Place the chicken in a roasting pan and roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
8. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
