Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 2 lemons
- 4 cloves of garlic, minced
- 2 tablespoons of fresh rosemary, chopped
- 2 tablespoons of fresh thyme, chopped
- 1/4 cup of olive oil
- Salt and pepper to taste
Step by Step Guide:
1. Preheat the oven to 400°F (200°C).
2. Rinse the chicken inside and out, then pat dry with paper towels.
3. In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, olive oil, and the juice of one lemon. Mix well to create the herb marinade.
4. Carefully loosen the skin of the chicken and rub half of the herb marinade under the skin, spreading it evenly.
5. Cut the remaining lemon into slices and stuff them inside the cavity of the chicken.
6. Brush the outside of the chicken with the remaining herb marinade and season generously with salt and pepper.
7. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
8. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
9. Serve the lemon herb roasted chicken with your favorite side dishes and enjoy!
