- 1 whole chicken (about 4-5 lbs)
- 2 lemons
- 4 cloves of garlic
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary

- Salt and pepper to taste
Step by Step Guide:
1. Preheat the oven to 400°F (200°C).
2. Rinse the chicken inside and out with cold water and pat dry with paper towels.
3. Cut one lemon into slices and stuff the cavity of the chicken with the lemon slices and garlic cloves.
4. In a small bowl, mix together the olive oil, juice of the remaining lemon, rosemary, thyme, salt, and pepper.
5. Rub the olive oil mixture all over the chicken, making sure to coat it evenly.
6. Place the chicken in a roasting pan and roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
