Recipe Name: Lentil and Vegetable Stir-Fry with Pineapple

Ingredients:
- 1 cup pasta
- 1 cup rice
- 1/2 cup red lentils
- 1/2 cup beluga lentils
- 1/2 cup chickpeas
- 1 cup pineapple, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1/2 cup cashews
- 1/2 cup feta cheese, crumbled
- 1/2 cup creme fraiche
- 1/2 cup Greek yogurt
- 2 tbsp soy sauce
- 2 tbsp sweet chili sauce
- 1 bell pepper, sliced
- 2 poblano peppers, sliced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 cup asparagus, chopped

Instructions:
1. Cook the pasta and rice according to package instructions. Set aside.
2. In a large pan, heat some oil over medium heat. Add the onion and garlic, sauté until fragrant.
3. Add the red lentils, beluga lentils, and chickpeas to the pan. Cook for a few minutes until the lentils start to soften.
4. Stir in the pineapple, cashews, feta cheese, creme fraiche, Greek yogurt, soy sauce, and sweet chili sauce. Mix well to combine.
5. Add the bell pepper, poblano peppers, broccoli, cauliflower, and asparagus to the pan. Cook until the vegetables are tender-crisp.
6. Serve the lentil and vegetable stir-fry over the cooked pasta and rice.
