Recipe Name: Lentil Soup
Ingredients:
- 1 cup dried lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 cloves of garlic, minced
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil
Step by Step Guide:
1. In a large pot, heat some olive oil over medium heat.
2. Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables are softened, about 5 minutes.
3. Add the minced garlic, cumin, and paprika to the pot. Cook for another minute until fragrant.
4. Rinse the lentils under cold water and add them to the pot.
5. Pour in the vegetable broth and bring the soup to a boil.
6. Reduce the heat to low, cover the pot, and let the soup simmer for about 30-40 minutes or until the lentils are tender.
7. Season the soup with salt and pepper to taste.
